Is she interested.. or just bored?

This exact thing happened to my brother and six years later they are getting married this July. You just need to be there for her in her roughest time because if you can prove that you'll be there during her worst she'll for sure want you there for her best. I say stick with it and just go with the flow. Eventually she'll get over everything and you will be the one there left standing. Hopefully - she seems like she isn't shallow at all - she will realize how much you mean to her and she'll be ready for something more. Good luck - I'll keep my fingers crossed!
